A running list of interesting pizza flavor combinations.
Kimchi Bok Choy Pizza
Pizza sauce + gochujang, sesame oil, mozzarella, kimchi, bok choy, Parmesan, cilantro. Follows this recipe.
- Add 1 tablespoon of gochujang to pizza sauce. This is an amazing discovery! Gochujang and tomato-based sauce is really good. I will try a kimchi spaghetti with this combination.
- Brush crust with sesame oil, spread pizza sauce, top with mozzarella and bake.
- Chop 1 cup kimchi and 0.5 lb bok choy. Saute together in butter. Make extra to make a kimchi-bok choy grilled cheese sandwich.
- Arrange kimchi/bok choy on pizza, sprinkle with Parmesan and chopped cilantro.
Chopped cilantro is key – you need it to liven up the pizza. Sesame oil is a nice bonus on the crust.

Peking Duck Pizza
Hoisin sauce, mozzarella, roasted duck, cucumber, scallion. Not really Peking duck since it’s easier to buy a roasted duck. Next time, I will cut the cucumber into sticks rather than slices (they don’t act like pepperoni).
